Udon Noodles / Japanese Soup


Ingredients:
[2 large servings]
1 packet dried Udon noodle
1/2 cup Hontsuyu
2 cup water (for soup)
1 green onion, chopped
Nanami Togarashi

Method:
Boil 10 cups of water in a deep cooking pan. Add dried Udon noodle and cook for 7 minutes. Strain the water and wash the noodle with warm water. For udon soup, add hontsuyu and water in a small sauce pan and warm it up. Put udon noodle in a soup bowl, then pour over the soup. Sprinkle green onion, and serve. To add zest to the flavor, you can sprinkle Nanami Togarashi over udon.

Teriyaki Chicken / Japanese Style

Teriyaki is only one flavor in Japan but it's become very popular in America, and we believe you'll like this
recipe. The mirin is an essential ingredient that brings out flavor and creates the shine of the sauce.

Ingredients:
2 chicken breasts
2 tablespoons white wine or cooking sake
4 tablespoons soy sauce
4 tablespoons mirin
2 tablespoons sugar
1 glove garlic, graded or finely chopped
black pepper

Method:
Mix Sake, soy sauce, Mirin, sugar, and garlic in a bowl. Sprinkle pepper on chicken, and marinate the
chicken in the mixture for at least 30 minutes in the fridge. Heat a pan and pour in 1 tablespoon of
vegetable oil. Place the chicken in the pan and fry them on med-low heat. Turn the chicken over to fry
both sides. Add in the sauce that the chicken was marinated in. Simmer on low heat until the sauce becomes
thick. Cut the chicken in strips, put on a plate with rice, and pour sauce in the pan over the chicken and serve.

Tempura / Japanese Style



It seems everybody loves tempura, and this is the real thing using imported ingredients from Japan, you can't go wrong.

Ingredients:
1 cup Tempurako
1 cup cold water (for tempurako)
oil for deep-frying
4 large tiger shrimps
1 onion
1 carrot
1/4 cup hontsuyu
1/2 cup water (for dipping sauce)
Oroshi Shouga (prepared ginger)

Method:
Peel shrimp, retaining tail shell, and devein. Make a few slits along the inside curve to prevent curling during cooking. Thinly slice the onion and carrot. Heat the oil for deep-frying to 340F in a wok. Meanwhile, prepare the batter: lightly mix the tempurako and cold water. Using chopsticks or a fork, very lightly fold in the flour with just 4 or 5 strokes. Add sliced onion and carrot together in the bowl, batter with the Tempurako mix, and carefully drop a tablespoonful of battered vegetables at a time into the oil. Deep fry a few at a time at 340F and remove from the oil when both sides are light golden, and drain on paper towels. Repeat until all the battered vegetables are cooked. Do the same for shrimp.

In a small pan, prepare the dipping sauce for tempura by mixing Hontsuyu and water, and warm it up.

Serve tempura with dipping sauce. Add Oroshi Ginger in the dipping sauce.

Nikujaga / Japanese Beef and Potato Stew

Nikujaga is a popular meal especially at home. It is a typical "mother's taste" meal. The taste of Nikujaga will be a pleasant surprise.

Ingredients

Potatoes
Beef or pork: thin sliced
Onion
Sugar
Soy sauce
Dashi soup stock

Method

Slice the onions, and cut the potatoes into 1 inch square pieces. Cut the sliced meat into 2 inch pieces. Fry the potatoes, onions, and the meat in a good pan (saute pan works best). After about two minutes add water. Everything should be more or less covered with water. Add two tablespoons soy sauce and the same amount of sugar. Add also a little bit of Japanese fish soup stock (dashi). Cover the pan with lid, and let it cook for about twenty minutes or until the potatoes are soft. Serve and enjoy the nikujaga.

Wasabi Ginger Lime Ahi Tuna Burgers

The final result of this recipe is the most heavenly burger you've ever tasted. Gently-marinaded
fish, barbequed, combined with ginger wasabi mayonnaise and fresh shredded veggies on
a good bun. There is no better burger! We are pleased to present step-by-step instructions
as well as detailed photographs. Makes 4 servings.

Ingredients
1/2 cup mayonnaise
6 tablespoons fresh lime juice, divided
1/3 cup drained pickled ginger from jar
1 tablespoon plus 1/4 cup soy sauce
2 teaspoons wasabi paste
1/2 teaspoon sesame oil

1 1/4 cups paper-thin slices red cabbage
1 1/4 cups paper-thin slices Napa Cabbage
1 1/4 cups shredded carrots
4 6-ounce 1-inch-thick ahi tuna steaks

4 3- to 4-inch-diameter hamburger rolls or egg buns, split in half
Room-temperature butter

Method

Blend mayonnaise, 2 tablespoons lime juice, ginger, 1 tablespoon soy sauce, wasabi paste,
and sesame oil in processor until smooth. Season to taste with salt and pepper. (Can be made
1 day ahead. Transfer to bowl, cover, and chill.)

Mix red cabbage, Napa cabbage, and carrots in medium bowl. Add 4 tablespoons lime juice; toss.
Season with salt and pepper. Place tuna on plate. Pour 1/4 cup soy sauce over; turn to coat. Let
tuna and cabbage stand at least 15 minutes and up to 1 hour, tossing cabbage and turning tuna
occasionally.

Prepare barbecue (medium-high heat). Spread cut sides of rolls with butter. Grill, buttered side down,
until golden. Transfer rolls to 4 plates. Spread cut sides with wasabi mayonnaise.

Mound 1/4 cup cabbage slaw on each roll bottom. Grill tuna until cooked to desired doneness, 1 to 2
minutes per side for medium-rare. Place tuna on cabbage atop rolls. Top with another 1/4 cup cabbage
slaw, then roll tops.

Hon Tsuyu is basically extracted bonito and japanese niboshi sardine oil mixed with soy sauce. It's used as a soup base for noodles such as Udon, Soba , and Somen. It can be served hot or cold. Refrigerate after opening.

Ingredients: dried bonito extract, soy sauce (water, soybeans, wheat, salt), dried sardine extract, water, high fructose corn syrup, sugar, salt, monosodium glutamate, alcohol, corn syrup, mirin (water, rice, corn syrup, alcohol), kelp extract, disodium inosinate, disodium guanylate, lactic acid. Product of Japan.

"Onigiri"

1.Siapkan "nori" ukuran sesuai selera
2.Siapkan nasi yang siap dimakan, diusahakan masih hangat agar mudah di bentuk
3.Siapkan isi Onigiri, Untuk ini bisa beragam sesuai selera:
-ikan, mau di bakar, di goreng, ditumis, direbus terserah yang penting dagingnya dan gak bertulang serta jangan masukkan tulang.

-ayam, mau di bakar, di goreng, ditumis, direbus terserah yang penting dagingnya dan gak bertulang serta jangan masukkan tulang.

-Telur, mau digoreng direbus up to u

-sayur, kalau km suka, jangan dgn kuahnya

-etc, suka-suka km dech mau diisi apa, ciptakan creasimu



Cara pembuatan:
-Dgn alat bantu
masukkan nasi kedalam cetakkan onigiri, 1/3 dari cetakkan
kemudian masukkan bahan atau isi onigiri
setelah itu masukkan nasi lagi kedalam cetakkan
cetak, setelah di cetak lapisi dgn nori(ukuran sesuai selera)



-Dgn tanpa alat bantu (bersyukurlah kalau nasinya gak panas/hangat)
tips: dianjurkan memakai plastik sarung tangan untuk menjamin ke higienisan onigiri dan kebaikan tanganmu dari panasnya nasi)

nasi taruh dikepalan tangan, taruh bahan/isi di tengah nasi, tutup lagi dengan nasi.
Kemudian bentuklah segitga (dianjurkan bola bagi yang belum mahir)
setelah nasi udah menutup isinya bungkus dengan nori (ukuran sesuai selera)

BEEF TERIYAKI

Bahan-bahan :
1. 1/2 kg daging ( Diiris tipis2 memanjang)
2. 6 sendok makan saos teriyaki
3. 2 sendok makan kecap manis
4. 2 sendok makan gula pasir
5. Garam secukupnya
6. Air secukupnya
7. minyak goreng
8. Bawang bombay ( iris tipis2 )

Bahan yang di haluskan :
1. 6 siung bawang putih
2. 1/2 sendok makan lada
3. 1/4 jahe yg utuh

Cara membuat;
1. Rendam daging dgn saos teriyaki, kecap manis dan gula,di aduk rata lalu diamkan selama 1 jam
2. Panaskan minyak goreng,stlh panas tumis bahan2 yg sdh di aluskan
3. Setelah tercium wangi2 masukan daging yang sudah direndam slama 1 jam dan bawang bombay, aduk hingga rata..
4. setelah tercampur rata masukan garam dan air,aduk hingga matang...jadi dech...

Gampang kan....Slamt mencoba:)
