Hi forum.or.id pepole, here i share my recommendation of any unique food recpies from any countries in the world. So let's check this out ...

1. Sopa De Fideo (Mexican Noodle Soup) @wondernonieskitchen

Ingredients

  • 100 g vermicelli or angel hair pasta (broken into 2 cm pieces)
  • 2 tbsp olive oil (divided)
  • 3 cloves garlic (minced)
  • 1 medium onion (finely diced)
  • 1 cup bell pepper or carrot or zucchini (cut into 1 cm cubes)
  • 1/2 tsp ground cumin
  • 1/2 tsp sweet paprika
  • 2 cups tomatoes (diced) or 1 can diced tomatoes
  • 1 tbsp tomato paste
  • 5 cups vegetable or chicken stock
  • 1/2 tsp salt (to taste)

Steps

  • Heat a large pot on medium & add 1 tbsp oil.
  • When oil is hot, add noodles (or pasta), toss to coat & cook for 5 mins or until they turn golden brown, remove from pot.
  • While noodles are browning, blend tomatoes until smooth.
  • Into the same pot used earlier, add remaining olive oil & garlic, cook till fragrant.
  • Add onion, cook till translucent then add cumin & paprika, followed by the cup of vegetables.
  • Cook for 2 mins then add both types of tomatoes, noodles, stock & salt.
  • Bring to a boil, lower heat & simmer for 15 mins until vegetables are tender & noodles are cooked.
  • Taste to adjust seasoning, ladle soup into serving bowls, garnish with chopped cilantro or parsley & serve with wedges of lime (optional)
Elote (Mexican Street Corn)

  • 4 corn on the cob
  • 4 tbsp mayonnaise or yoghurt
  • 1 tsp lime juice
  • 1/2 tsp paprika, cayenne or chipotle powder
  • 1/4 tsp salt
  • 1/2 cup Cotija or Parmesan cheese (finely grated)
  • 1 tbsp cilantro or parsley (finely chopped)

Steps To Make Elote

  • Place corns into a pot of water, bring to a boil & cook for 15-20 mins.
  • While corn is being parboiled, combine mayo, lime juice, chilli powder & salt in a small bowl.
  • In a separate bowl, combine cheese & chopped herb.
  • Remove corn from water, grill on an open flame till they start to char.
  • Brush with mayo mixture, sprinkle with cheese mixture & serve immediately.


2. Handmade Squid Ink Pasta @wondernonieskitchen

Ingredients

  • 4 large eggs
  • 2 tbsp squid ink paste (fresh or bottled)
  • 1/2 tsp salt
  • 3&1/2-4 cups AP flour (Italian 00 flour is highly recommended)

Sauce

  • 10 tbsp olive oil
  • 4 tbsp garlic (minced)
  • 1 tsp chilli flakes
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 2 tbsp fresh parsley (chopped)
  • 1 cup cherry tomatoes (halved)

Steps to make

  • Add eggs, salt & squid ink in a blender, mix on low speed for 10 secs & set aside.
  • Add flour in the bowl of a stand mixer fitted with a dough hook, add egg mixture & knead on low speed for 4 mins or until dough comes together (if too dry, add 1 tsp or 2 of water or if still sticky, add some flour)
  • On a generously floured work surface, press dough into a ball, cling wrap tightly & allow to rest at room temp for 1 hr.
  • Cut dough ball into 4, flatten to abt 1 cm thick & feed dough through rollers.
  • Dust of excess flour, fold rolled dough into thirds, keeping width to abt 10 cm.
  • Lightly dust with more flour as needed, repeat rolling & folding process once or twice more until dough is smooth.
  • Start increasing roller settings until desired thinness is achieved (I stopped at 7)
  • Lightly flour rolled strip of dough, attach desired cutting attachments, feed dough through cutter, dust with flour to coat & gather into loose bundles.
  • Cook in a pot of boiling salted water for 3 mins or until al dente & drain.
  • To make the sauce, heat oil in a large pan, add garlic, sauté for 1 min, add the rest of the ingredients, sauté for 1 min.
  • Remove from heat, add pasta & mix well & taste to adjust seasoning.
  • Transfer onto individual serving plates, garnish as desired & serve with cooked seafood of choice.

3. Shakshuka @engineers_plates

Ingredients

  • 2 tbsp olive oil
  • 7 eggs
  • 3 large tomatoes, 2 chopped, 1 mashed
  • 1 medium onion, chopped finely
  • 3 garlic cloves, chopped finely
  • 1 tbsp dried parsley leaves
  • 1 tbsp sugar
  • A pinch of salt and white pepper powder
  • 1 cup water

Instructions

  • Saute the onion and garlic in hot oil on a pan till fragrant. –
  • Add the tomatoes and water in. Stir to boil. Cover until the water reduced. –
  • Add seasonings. Stir. –
  • Place the eggs in. Cover till well-cooked. Then turn off the heat. –
  • Sprinkle the leaves on top. Served.
